The war in the kitchen is not a war often publicized.

The chef’s food is an international conflict and the kitchen is his nation.

There is no patron rallying for his braised duck breast.

No movements to protest the paring knives that claim his dutiful fingers.

No propaganda that subtly, yet effectively, makes tipping an obligation rather than a choice.

Knowing this, he awaits the day that someone surrenders – just hoping that it comes before his last finger goes.
